Carrots as Calcium Source
The carrot is one vegetable I never run out of. It’s a staple in my grocery list and we consume a lot because it’s so versatile. Juices, soups, cakes and muffins, sauces, stews, salads and side dishes — there are so many ways you can use them!
Not only are they excellent sources of Vitamin A and antioxidants, in the future, they may even be viable sources of calcium as scientists have developed a modified type of carrots with enhanced calcium content. The say a 100 gram serving of these carrots provides 60 milligrams, about 42 percent of which is absorbable. Now, that may not seem much, considering that the daily requirement for calcium is 1,000 milligrams, but if more fruits and veggies are bred to contain more calcium with high absorption rates, that could make a lot of difference!
